You don't have to knead this? Win. And I agree with Earth Balance. I firmly believe that one day it will rule the world. Veganism aside, it's the BEST buttery spread. The fact that it's transfat free and all that jazz is secondary.

Oh and btw, use a couple jalapenos, seeded and chopped. The flavor is SO good! The cayenne was fine, it made the dish spicy, but the jalepenos are SUCH an awesome flavor with the corn and limes.

Oh and I might add: If you plan on eating it as a cold salad, you would of course substitute olive oil or something for the butter... cause ya know, cold, congealed butter is kind of not delish.
